Usually Naan, an Indian flat bread, is the first thing people think of when talking about yogurt bread, but actually yogurt can be used in just about any bread recipe.

Many gluten-free recipes use yogurt to add a lightness to bread made with alternative flours.

Naan or Indian Yogurt Bread

Naan is a leavened bread from Northern India. Some recipes for Naan use yeast, but it is not necessary since the baking soda and yogurt create a leavening effect.

4 cups flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon salt
1 egg, beaten
6 tablespoon plain yogurt
3 tablespoons butter or ghee
1 cup milk
2 tablespoon poppy seeds or sesame seeds (optional)

Sift all of the dry ingredients together in a big bowl. Add in the egg and yogurt and mix gently. Stir while adding in the milk to make a thick dough.

Banana Yogurt Bread

Banana Yogurt Bread
3/4 cup butter, softened
2 cups sugar
1 cup brown sugar
3 eggs
6 ripe bananas, mashed
2 cups plain yogurt (I used whole milk yogurt)
2 teaspoon vanilla extract
2 teaspoon cinnamon
1/2 teaspoon sea salt
3 teaspoon baking soda
4 cups all-purpose flour
1/2 cup white whole wheat flour
1 cup chopped walnuts, toasted if desired

Preheat oven to 325F. Grease two 9”x5” loaf pans.
In a large bowl, cream together the butter and sugars.
Add eggs, mashed bananas, yogurt, vanilla, and cinnamon.
Mix in salt, soda and flours.
Add walnuts.
Divide into prepared loaf pans.
Bake at 325 F for 70 minutes or until inserted toothpick comes out clean.

Gluten Free Banana Bread

Here is an easy gluten-free recipe.

1 3/4 cups gluten-free baking mix
2/3 cup sugar
1 teaspoon baking soda
pinch of sea salt
1 egg, beaten
1/3 cup strained plain yogurt
3-4 super ripe bananas, mashed
1 teaspoon vanilla extract
1/4 cup sunflower seeds (optional)


Which Grains are Gluten-Free?

Grains containing gluten:
Oat, Wheat, Rye, Barley and Spelt

Gluten-Free Grains for baking:
millet, buckwheat, amaranth, tapioca

Mix together the dry ingredients. In a separate bowl, whisk the egg and mix in the mashed banana, yogurt and vanilla extract. Combine the wet and dry ingredients and stir until well blended. Pour into a bread pan and sprinkle with sunflower seeds. Bake at 350 degrees for about 45 minutes or until toothpick or fork comes out clean. Enjoy with a generous pat of butter.

Banana Yogurt Bread With Flax Recipe

1/2 cup butter, softened
3/4 cup light brown sugar, packed
1 egg

3/4 cup whole wheat flour
3/4 cup all purpose flour
1 teaspoon baking soda
3 tablespoon ground flax seeds (I buy whole seeds and grind them in a coffee grinder)
1/2 teaspoon salt
1 1/2 cups mashed bananas (2-3 super ripe bananas)
1/4 cup plain yogurt
1 teaspoon vanilla extract
3/4 cup chopped walnuts or pecans (optional)

Preheat oven to 350 F.
In a large bowl, cream together butter and sugar until fluffy; beat in the egg.

In a separate bowl, sift or whisk together the flours, flax, baking soda and salt.

In another small bowl, combine bananas, yogurt and vanilla.
Add dry ingredients alternately with banana mixture to the creamed mixture, each time mixing until just blended.
Stir in walnuts or pecans if desired. Bake for about 35 minutes or until toothpick comes out clean.

Orange Yogurt Bread

2/3 cup butter, softened
1 1/4 cups sugar
2 eggs
1/2 cup plain yogurt
1/2 cup orange juice
1 tablespoon grated orange peel
2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt

1/2 cup confectioners sugar
2 to 3 teaspoons orange juice

Preheat oven to 350 degrees.

In a large mixing bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add yogurt, orange juice and peel. Combine the flour, baking powder, baking soda and salt; add to creamed mixture and mix well.

Pour into one greased 9″ x 5″ loaf pan. Bake at 350 degrees for 55-65 minutes or until a toothpick comes out clean.

For glaze, combine confectioners’ powered sugar and enough orange juice to achieve desired consistency. Drizzle over cooled bread.

Pear Yogurt Bread Recipe

1/2 cup butter (1 stick)
1 cup sugar

2 eggs
2 cups all-purpose flour

1/2 teaspoon sea salt

1/2 teaspoon baking soda

1 teaspoon baking powder

1/4 teaspoon nutmeg
1/4 cup plain yogurt
2 teaspoon vanilla
1 cup very ripe pear, cored and coarsely chopped

Preheat oven to 350 degrees. Cream butter and gradually add sugar. Beat eggs in one at a time.
Combine flour, salt, baking soda, baking powder and nutmeg. Add to egg mix, alternating with yogurt. Stir in pears and vanilla. Pour in greased bread loaf pan. Bake for about 45 minutes or until toothpick or fork inserted comes out clean.

Herbed Yogurt Bread (bread machine recipe)

1/2 cup plain yogurt
1/2 cup water
1 teaspoon sea salt
1 1/2 teaspoons olive oil
3 cups bread flour
1/2 teaspoon thyme
1/2 teaspoon oregano
1 teaspoon basil
1/2 teaspoon mint

1 tablespoon ground flax seeds
1 tablespoon sugar or honey
1 teaspoon yeast

Place all ingredients into bread machine in order given.
Bake on rapid cycle with light crust.
